The Quick and Easy Ketogenic Breading Substitute

For as many years as I remember, I’ve been taking a bowl of my favorite pork rinds, putting them in a ziplock bag and using a rolling pin to crush my pork rinds. If I don’t have a rolling pin, I’ll use another bowl, or a bottle of olive oil, or a brick, or whatever is heavy in the kitchen. It is a long and tedious process that doesn’t always make the best looking or usable pork rind crumbs.

Later came the food processor that made it easier but still a lot of effort (including the cleanup) for not-so-perfect pork rind crumbs.

Introducing Bacon’s Heir Pork Panko

Pork Panko is a finely ground panko bread crumb made from pork rinds, also known as chicharrones. No seasoning is added other than rock salt to allow a blank palette for your high protein, low-carb, gluten-free recipes.

Ideal for breading low-carb fried chicken, or any low-carb or gluten-free recipe that calls for breadcrumbs.

CarbSmart Podcast Episode 23: Refusing Holiday Food and Staying Low-Carb can be tough at first but you can do it to avoid the Food Pushers. The holidays are straight ahead, and with them piles and piles of carby junk, and worse, people nagging you to eat the stuff. Why so many people think that saying things like "But you have to eat it! It's traditional!" and "I worked all afternoon making it just for you" constitutes an expression of holiday goodwill, I have no idea, but sadly this behavior is all too common. You need to think ahead about how to respond to this sort of thing.
