Preparation Method
- 2 cups broccoli — pieces (bite size)
- 1/2 cup fresh orange peel — (Remove the peel from the orange in one inch strips with a vegetable peeler. Remove any white pith with a sharp knife.)
- 1 tablespoon vegetable oil
- 1/2 cup walnuts — (or pecans)
- 1/4 teaspoon ginger — finely minced fresh
- 2 tablespoons soy sauce
- 1/2 cup diet orange soda
- 1/4 teaspoon orange extract
- 1/2 teaspoon lemon pepper
Remove the peel in one inch strips with a vegetable peeler. Remove any white pith from the strips with a sharp knife.
Heat the oil over in a 12 inch nonstick skillet medium heat. Add the orange peel and nuts. Saute until the peel just begins to turn golden brown on the edges. DO NOT BURN! This will take only two to three minutes.
Combine the diet orange soda and the orange extract. Set aside.
Add the broccoli and saute for 5 minutes. While cooking the broccoli, sprinkle the cooking mixture with the orange soda/ extract mixture. After about four minutes, add the soy sauce and lemon pepper. Stir well and serve either hot, warm, or chilled.
