The most difficult part about following a low-carb lifestyle is probably holiday time without the mashed potatoes. Now, I won’t insult you by telling you that my Smashed Cauliflower Fauxtatoes taste exactly like mashed potatoes, but I can promise you that the texture is pretty similar and the taste is out of this world. There is a pretty good chance, however, that if you don’t tell your guests that it’s cauliflower, they will probably think it IS potatoes; and they will love it!

Ingredients
- 2 heads fresh cauliflower
- 2 tablespoons grass-fed butter
- 1/4 to 1/2 cup diced sauteed onions
- 8 ounces cream cheese, softened
- 2 cups sour cream
- 3 tablespoons heavy cream
- 2 cups grated cheddar cheese
- 1/2 teaspoon garlic powder
Instructions
- Break the cauliflower into florets and steam until tender, about 10 minutes.
- While cauliflower is steaming, sauté the onion in the butter.
- When the cauliflower and the onions are done, place everything in a large mixing bowl.
- Mash all the ingredients together and place them in a buttered 9″ x 12″ casserole or a large baking dish.
- Bake at 350° F for 30-45 minutes, or until cheese is completely melted and the casserole is heated through.
- Serve hot.
Notes
Recipe can be doubled. Reheats well.
Make Ahead Tip: The entire casserole can be made up to two days ahead of time and baked in a 350 degree oven for about 35 minutes.
