Egg Nog is a holiday treat that makes everyone feel at home. People who do not do well with dairy may not have been able to enjoy it in the past. It is also a drink that is easy to make into a low carb version. Serve this to your guests around the fireplace and everyone will have a festive night!

Ingredients
- 1 13 oz. can full fat coconut milk
- 3 egg yolks
- 1/2 cup water
- 1 teaspoon stevia powder extract or 1/2 cup birch xylitol
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract (gluten free)
- 1 teaspoon cinnamon
- 3 cloves
- 1/2 teaspoon nutmeg
- 1/2 cup rum or other gluten free spirit (optional)
Instructions
- Place a few inches of water in a soup pot over
medium high heat. - Place all the ingredients, except the alcohol in a large glass bowl.
- Place the glass bowl over the simmering water to create a double boiler.
- Make sure the water does not touch the bottom of the bowl.
- Stir the contents of the bowl every few minutes for about 20 minutes until the milk mixture is coating a spoon.
- Remove the bowl from heat and strain out the cloves.
- Stir in rum if desired.
- Refrigerate for two or three hours.
- Serve and enjoy!
