Not sure how you can use this exceptional flour? Well, here’s a delicious recipe —

Alison’s Wheat-Free Brownies

1/3 cup Butter or non-dairy alternative

1/2 cup Cocoa powder

6 Eggs or equivalent substitute

1 cup Sugar (Substitute with Steel’s Maltitol, available here at CarbSmart.com — use it cup for cup like sugar!)

1/2 teaspoon Vanilla

1/2 cup Let’s Do Organic Coconut flour, sifted

1 cup Chocolate chips, optional (try our Nevada Manna Semi-Sweet Chocolate Chips!)

Instructions: Preheat the oven to 350 degrees. In a medium saucepan over low heat, blend the butter and cocoa powder. Remove from heat and let cool. In a separate bowl, mix the eggs, sugar and vanilla. Blend this into the cocoa mixture. Stir in the coconut flour until the batter is no longer lumpy. Add the chocolate chips, if desired. Bake in a greased 8×8 baking pan for about 30-35 minutes.

We encourage you to try this recipe and experiment with your own – enjoy!

CarbSmart Podcast Episode 23: Refusing Holiday Food and Staying Low-Carb can be tough at first but you can do it to avoid the Food Pushers. The holidays are straight ahead, and with them piles and piles of carby junk, and worse, people nagging you to eat the stuff. Why so many people think that saying things like "But you have to eat it! It's traditional!" and "I worked all afternoon making it just for you" constitutes an expression of holiday goodwill, I have no idea, but sadly this behavior is all too common. You need to think ahead about how to respond to this sort of thing.
