Low-Carb does not mean giving up all your favorite sweet treats. It just means being a bit more creative. I’ve taken all the guess work out of it for you with my No-Bake Chocolate Mocha Cheesecake. This recipe is incredibly simple but it will look like you spent hours slaving over a hot stove. This cheesecake is a chocolate lovers dream!

Ingredients
- 1 envelope Knox unflavored gelatin
- 1/2 cup boiling water
- 2 tablespoons instant coffee crystals
- 8 ounces heavy cream
- 12 ounces cream cheese, softened
- 1/4 cup Swerve sweetener
- 3 packets sugar free hot cocoa mix
Instructions
- Completely dissolve the gelatin in the boiling water. Stir in the coffee. Put mixture in the freezer for a few minutes to cool.
- Whip the cream and set aside.
- In another bowl, combine the cream cheese, sweetener, and sugar free cocoa mix. Use an electric hand mixer to combine them thoroughly.
- When coffee/gelatin mixture is just warm/hot, add it to the cream cheese mixture and mix well. Lightly fold in the whipped cream and pour the mixture into a pie plate.
- Let it set up in the refrigerator for a few hours. Cut into 8 slices.
- Garnish with additional whipped cream, if desired.
