Today is National Cheese Pizza Day and since we are low carb dieters, I’m going to celebrate National Low Carb Cheese Pizza Day.

Of course regular cheese pizza would be low carb if it wasn’t for the crust, so a low carber has two options – make a low carb crust or make a bread-less crust. My favorite bread-less pizza crust is made with either just cheese or a combination of cheese and shredded cauliflower.

Most low carb pizza recipes will tell you to choose your favorite low carb toppings but since we’re making this National Low Carb Cheese Pizza Day, you should forget about all toppings except cheese but if you sneak some on your low carb pizza today, I won’t say a word.

And what if you’re lactose intolerant (like I have become)? You can go to your favorite supermarket and find a growing selection of dairy-free cheeses. There you’ll find that most dairy-free cheeses are also gluten free and low carb so you’ll get a very close taste of regular cheese without the dairy. Soy cheese and “veggie” cheese have been popular for years but I have just become familiar with almond cheeses. Dairy-free cheeses come in all shapes and flavors. You can find Mozzarella, Cheddar, Jack, and other flavors. They come in block, slices, and perfect-for-pizza shredded. I am using the Lisanatti Foods brand and am very happy with the taste and texture. Today I’ll go pick up their Mozzarella Style Shred for tonight’s low carb pizza.
