Mediterranean Grilled Vegetables with Chermoula Marinade Recipe
Summer is a great time for grilling and vegetables are an important part of a low carb diet, as they help detox the liver for more effective fat burning. Colorful summer vegetables are also full of antioxidants that help slow the aging process and help protect us from cancer.
Charmoula is a marinade that is commonly used in Moroccan and southern Mediterranean recipes. It is made up of several different herb combinations including cilantro, paprika, and cumin. Cilantro has special properties for improving blood sugar regulation to fight insulin resistance and diabetes. Ingredients
- 2–3 medium zucchini
- 1 medium eggplant
- 1 Tablespoon Cumin
- 2 garlic cloves
- 1 bunch of fresh cilantro
- 1 fresh lemon juiced
- 1 1/2 teaspoons paprika
- 1/8 teaspoon cayenne pepper
- 1/2 cup extra-virgin olive oil
- Sea salt and pepper to taste
Instructions
- Slice the eggplant and zucchini into flat slices and put into a bowl.
- Put all the spices into the food processor until it forms a sauce.
- Toss the veggies with the sauce until they are all coated.
- Let the veggies marinate for about 15 minutes.
- Heat up the gas BBQ or grill pan and cook on high heat for about 5 minutes on each side.
- Serve with your favorite grilled grass fed beef or lamb.
