On March 24, 2023, we changed the title of this recipe from “Lower Carb Matzo Balls for Chicken Soup Passover Recipe (NOT KOSHER)” to “A Non-Kosher Recipe For Lower-Carb Matzoh Balls For Chicken Soup.
Place matzo mix and crushed pork rinds in a deep bowl. Add everything else and mix well. Chill for about 1/2 hour.
Remove from refrigerator, and make 12 little round balls. Put them back in the fridge, and keep chilled until you are ready to cook them.
Bring the soup stock to boil, then add balls. When stock returns to a boil, turn down to a simmer, cover tightly, and simmer slowly for abut 45 minutes. I add my veggies and cooked chicken chunks the last 10 minutes.
