Low-Carb Twice-Baked Not-Potato Casserole

Ingredients

  • 1 head cauliflower, trimmed, washed, and cut into chunks
  • butter
  • cream or sour cream
  • salt and pepper (to taste)
  • grated cheddar cheese
  • crumbled bacon
  • 1 beaten egg

Instructions

  1. Steam the cauliflower until it is well-cooked. Drain it thoroughly.
  2. Add 2 to 3 tablespoons of butter and mash it up. (You can mash it by hand with a potato masher or a mixer if you like it a little chunky, or in a food processor or stem-wand type mixer if you like it smooth.)
  3. Add the cream or sour cream a tablespoon at a time until the cauliflower reaches the desired consistency, then add salt and pepper to taste.
  4. Add grated cheddar cheese, crumbled bacon, and a beaten egg.
  5. Place in a casserole and broil until the top is browned.
