Green and red and purple and yellow, plus a gorgeous salmon-pink dressing. You’ll make a big hit at the party with this, but you’ll be really happy to have it with the same old Tuesday chicken.

Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1/3 cup diced green bell pepper
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced yellow bell pepper
  • 1/3 cup diced red onion
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tablespoons white wine vinegar
  • 1 tablespoon minced fresh dill weed, or a teaspoon dried dill weed
  • 3/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 18 drops liquid stevia extract

Instructions

  1. Shred your cabbage – slice it thinly with a knife or food processor, rather than chopping it, it makes for a better texture. Throw the cabbage in a big mixing bowl. Dice the rest of the vegetables, and throw them in, too.
  2. Measure everything else, mix it all together, pour over the veggies, and stir till everything is evenly coated. Refrigerate for several hours before serving, to let the flavors blend.
