3pounds Gala or McIntosh Apples peeled and cut into 1/2-inch thick slices
1cup Fresh Cranberries
2–4 Tablespoons Swerve or other low-carb sweetener. Coconut sugar may be substituted for Paleo diets
3/4cup Water
1 Cinnamon Stick
2 Teaspoons fresh lemon juice
Instructions
In a large saucepan, combine apples, cranberries, sweetener, water, and cinnamon stick and bring to a boil.
Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
Remove mixture from heat; discard cinnamon stick. Stir in the lemon juice.
Serve warm or cold with Kosher Low-Carb Vegetable Latkes or Kosher Low-Carb Sweet Potato Latkes.
