Company Cauliflower Casserole Low-Carb Gluten-Free Recipe
This Company Cauliflower Casserole is perfect for the holidays. It’s Low-Carb, Gluten-Free, creamy, rich, and delicious. The best part, a little goes a long way. It doesn’t freeze well, so if you have leftovers, pack it up and send it home with your guests. They’ll love you for it! I like to keep a bit of the leftovers for myself because it tastes great for breakfast the next morning with a hot cup of coffee. It’s rather indulgent!

Ingredients
- 5 cups fresh cauliflower, trimmed and cut into chunks
- 2 cup sour cream
- 1 1/2 cups grated cheddar cheese
- 6 green onions, chopped (separate white and green parts)
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 6 slices bacon, cooked crisp and crumbled
Instructions
- Cook cauliflower until tender but firm. Drain and chop into pieces about the size of hash browns.
- Mix together sour cream, 1 cup of the cheddar, white part of green onions, salt and pepper.
- Stir in cauliflower.
- Transfer to a greased baking dish and sprinkle rest of cheddar on top.
- Bake at 350° F for 20 minutes or until heated through.
- Crumble bacon on top and sprinkle on the chopped tops of the green onions.
Notes
Recipe can be doubled. Reheats well, but does not freeze well.
