Ingredients

  • 4 pounds broccoli
  • 1/2 cup grass-fed butter
  • 1 red pepper, sliced into thin strips
  • 1/2 cup mushrooms, sliced
  • salt and pepper to taste

Instructions

  1. Trim off the florets from the broccoli and place them in a small bowl and run them under water to wash away any grit.
  2. Bring about an inch of water to a boil in the bottom of the pot into which your steamer basket or insert fits. Put broccoli florets in the steamer basket, set over the boiling water, cover, and steam until tender to the bite, 4-5 minutes until crisp tender and then set aside.
  3. Melt the butter in a large skillet.
  4. Sauté the pepper strips in the butter until just crisp tender.
  5. Add the cooked broccoli and mushrooms. Toss to thoroughly combine the vegetables in the melted butter until crisp tender.
  6. Season to taste with salt and pepper. If you prefer a creamier taste, add more butter.
  7. Serve warm.

Notes

Make Ahead Tip: Cook the broccoli as directed, but undercook it slightly. Plunge into ice water to stop the cooking process. Drain the broccoli thoroughly and place it in a covered container in the refrigerator.

Sauté the red bell pepper strips, again, slightly undercooking them. Do not plunge them in an ice bath, though. Merely let them cool and put them in a covered dish in the refrigerator.

Just before the party, combine the red bell pepper strips, the broccoli, and the remaining ingredients and cook as directed above.

VARIATIONS
To change up the color and flavor, try using yellow or orange bell peppers or even different types of mushrooms.
