Low Carb Pudding Eggs

Yummy Low Carb Pudding Eggs are guilt-free, Easter pleasure in a candy egg!
Filling Ingredients
- 1 ounce sugar-free vanilla instant pudding mix (1 small package)
- ⅓ cup unsalted butter
- 2 cups Truvia, granular—or 2 cups sugar equivalent, powder after measuring
- ⅛ teaspoon stevia powder
- ⅓ cup boiling water
- 1½ teaspoons vanilla extract
Chocolate Coating Ingredients
- 7 ounces Lindt Excellence 85% Cocoa Extra Dark Chocolate
- 1 tablespoon coconut oil
Directions
- Bring butter and water to boil in a small sauce pan over medium high heat. Once it comes to a boil and butter melts, remove from heat.
- Pour hot water over pudding mix, stirring constantly. Add vanilla extract and mix well. Add powdered sweeteners and blend with a spatula.
- Divide into 56, ¾-1 teaspoon mounds. Cover and freeze mounds 2-24 hours. When firm, shape into eggs using the palms of your hands. Refreeze after shaping to keep them firm.
- While dough freezes (after shaping), place chopped chocolate and coconut oil in a microwave-safe bowl. Melt in 10-15 second increments, stirring after each interval. Remove when most of the chocolate is melted (about 90 seconds). Continue to stir until completely liquid and homogenous.
- Line tray with plastic wrap. Using your fingers or a long, two-pronged fork, dip each egg in chocolate, drain off excess and place dipped eggs on plastic. When all eggs have been dipped, cover pan and freeze for 20 minutes or until chocolate is set. Work in small batches, reserving remaining eggs in the freezer to keep them firm.
- Transfer dipped eggs to an airtight container and store in the freezer up to 3 months.

NOTES: These eggs are tasty treats. You can also flavor with coconut flavoring if desired. The interiors are grainy/crunchy–you either love them or hate them, but they do melt on your tongue rather nicely. We found them strangely addictive!
