Instructions

  1. Mix the eggs, Swerve, and cream together until light and fluffy.
  2. Heat a frying pan or skillet over medium heat. Add the butter to pan. When the butter is melted, pour in the egg mixture and swirl the pan so that the egg mixture evenly coats the bottom of the pan. Continue cooking until the eggs are set and just beginning to brown on the bottom. The top of the eggs will still be slightly moist.
  3. While the eggs are cooking, cut the cream cheese into small chunks. Add the cream cheese and jam on one-half of the cooked egg mixture. Flip the uncovered half of the eggs over the cream cheese and jam-covered half.
  4. Serve warm.

Notes

For a Paleo omelet, replace the Swerve with Coconut Sugar and the sugar-free raspberry jam with an organic unprocessed jam.
