One of my favorite low-carb meals is traditional low-carb chili. I’ve been making a variation of this recipe since I was in college at Syracuse University. About three times per month, all of the guys I lived with during my junior and senior years would get together Saturday night and make a HUGE pot of chili. Little did I know back then that this weekly staple was low carb–it just was–but unfortunately, the Italian bread we used to mop it up with was not.
Today, I still try to make a pot of chili at least once per month and I’m lucky because I now use Senator’s Chili Mix by Goldwater’s Foods as my chili base. I’ve been using it for about 10 years. It’s made with really fresh ingredients and lasts a long time in your pantry if you don’t make it as often as I do.

The Senator’s Chili Mix is my favorite low carb chili. I have been making it for years. Here’s my favorite recipe:
Andrew’s Low Carb Chili Recipe with Senator’s Chili Mix
Ingredients
- 1 tablespoon olive oil
- Pinch of sea salt and cracked black pepper
- 1½ cup onion, chopped
- 1 cup green, red, yellow and/or orange peppers, chopped
- 1 cup celery, sliced or diced (optional)
- 2 pounds any combination of ground beef, ground pork, ground turkey or ground bison (organic preferred)
- 3 garlic cloves
- 1 28-oz. can diced tomatoes
- 28 ounces water
- 1 packet Senator’s Chili Mix by Goldwater’s Foods
- 1 can Eden Organic Black Soy Beans by Eden Foods
- ¼ cup warm water
- 1 tablespoon Dixie Carb Counters Thick-It-Up or your favorite low-carb thickener
- Grated cheddar cheese (optional)
- Sour cream (optional)
Instructions
First, we are going to sweat the onions. Take a stock pot and set heat to low. Add onions, olive oil, salt and pepper. Stir well with a spatula. You want to cook the onions gently so that they stay translucent and do not get any color on them. After 10-15 minutes the onions should be translucent. Raise the temperature to Medium-High and add peppers and celery. Add meat and continue to cook stirring frequently until meat is browned. Add tomatoes and water and continue to cook until it comes to a boil. Reduce heat to low. Stir in chili mix and black soy beans and stir every 10 minutes for an hour.
Slowly sift low-carb thickener into the warm water and stir. Add to chili mixture gradually stirring until thickened. Over time, any remaining oil will come to the surface of the pot. The oil will help flavor the chili but at some point, start to remove most of it with a large spoon. Serving size is 1 cup. Top with grated cheese – Mexican blend or similar. Serve with shredded cheddar cheese and sour cream, if desired. But skip the crackers!
