Spring radishes are a delicious vegetable to snack upon, should the afternoon munchies hit. They provide great crunch, especially if you clean them and store them in an ice-water bath in the fridge. This is a no-brainer “recipe” if you can call it that. The peppery bite of the radishes and the creamy sweetness of the butter and tang from the sea salt make this a very satisfying, wholly ketogenic!

Ingredients

Scale
  • 6 radishes, cleaned, dried and chilled
  • 1 tablespoon unsalted butter
  • 1/4 tsp coarse sea salt of Kosher salt

Instructions

  1. Wash and dry radishes. Remove stems. Spread a dollop of unsalted butter on each radish. (We love KerryGold Butter from grass fed cows.)
  2. Sprinkle with a pinch of sea salt and shove them down your pie hole! Voila! No more hunger.

Notes

This is a great spring time Susie Snax to enjoy when the radishes are sweet and fresh. Smaller radishes are milder, larger ones have more bite. Be adventurous. Try some different types of radish, such as watermelon radishes.
