Instructions

  1. Wash and dry vegetables. If lettuce is wet, use a salad spinner to dry it or you can tear or chop the lettuce and place in a clean pillow case. Hold the pillow case closed and swing it over your head a few times to “spin” the lettuce dry. (You might want to do this outside). Also, you want to make sure you use a pillow case dedicated for kitchen use and wash it with unscented laundry soap.)
  2. Peel cucumbers and onions. Seed bell pepper. Chop or slice all ingredients in relatively uniform pieces about ¼ to ½ inch cubes or ⅛ inch slices.
  3. Toss with dressing just before serving. Top with feta and 2 kalamata olives per person.

Notes

Greek Salad is another salad favorite. We eat it at least once or twice a week. The combination of the crispy veggies with the garlic based vinaigrette and salty cheese and olives is a perfect side dish for most meals.
