Easy Low-Carb Greek Salad is a classic side salad dish that works with any Italian or Greek main dishes. Add chicken breast, lamb, or shrimp and watch this salad come alive as a main course.
- Prep Time: 15 min
- Total Time: 15 minutes
- Yield: 8 Cups 1x
- Diet: Diabetic
Ingredients
- 6 cups romaine lettuce
- 1 cup chopped cucumber
- 1/2 cup chopped red onion
- 1/2 cup chopped red bell pepper
- 2 ounces feta cheese
- 8 whole kalamata olives
- 10 tablespoons House Vinaigrette Salad Dressing
Instructions
- Wash and dry vegetables. If lettuce is wet, use a salad spinner to dry it or you can tear or chop the lettuce and place in a clean pillow case. Hold the pillow case closed and swing it over your head a few times to “spin” the lettuce dry. (You might want to do this outside). Also, you want to make sure you use a pillow case dedicated for kitchen use and wash it with unscented laundry soap.)
- Peel cucumbers and onions. Seed bell pepper. Chop or slice all ingredients in relatively uniform pieces about ¼ to ½ inch cubes or ⅛ inch slices.
- Toss with dressing just before serving. Top with feta and 2 kalamata olives per person.
Notes
Greek Salad is another salad favorite. We eat it at least once or twice a week. The combination of the crispy veggies with the garlic based vinaigrette and salty cheese and olives is a perfect side dish for most meals.
