Ingredients
- 2 cups almond flour
- 8 ounces butter melted
- 6 large eggs, separated
- 3 tablespoons Truvia or sweetener to equal 3 tablespoons sugar
- 2 tablespoons vanilla extract
- 1 teaspoon lemon extract
Instructions
- Mix the almond flour, butter, egg yolks, sweetener, vanilla extract and lemon extract together in a bowl. If the mixture is stiff, loosen it up a bit by adding spoonfuls of warm water one at a time and mixing well.
- In a very clean glass bowl, whisk the egg whites until they are stiff.
- Fold the whisked egg whites into the almond mixture.
- Pour into a baking tin, and bake at 350ºF for 30-40 minutes until risen and golden.
