Ingredients
- 1 cup Grated Parsnip
- 1 cup Grated Zuccini
- 1 cup Grated Carrots
- 2 Eggs Beaten
- Salt and Pepper to Taste
- 1/2 cup or More Olive Oil for Frying
Instructions
- Place the grated vegetables in a large colander and squeeze out excess water.
- In a large bowl, mix grated vegetables with egg, salt, and pepper. Start with two eggs for every 3 cups of grated vegetables to bind the latkes. After frying a few, add more egg as binder only if necessary.
- In a large frying pan, heat oil over medium to medium-high heat. Flick a few drops of water into the pan; if it sizzles immediately, then the oil is hot enough to begin frying.
- Using a soup spoon, drop the mixture by rounded heaping spoonful into the hot oil.
- After a minute or so, press down with a spatula to flatten the mixture into a patty.
- Cook 2-3 minutes on each side until golden brown.
Notes
- You may use any vegetable, or combination of vegetables, you enjoy in this recipe as long as you are able to grate them. Turnip also works very well.
- The nutritionals will vary depending on the type of vegetables, number of eggs, and oil used.
