- 2 tablespoons olive oil
- 1/2 cup frozen chopped onion
- 1/2 cup frozen chopped red bell pepper
- 1 pound salmon, in roughly 1- inch pieces
- 2 cubes Dorot frozen garlic or 2 fresh cloves, minced
- 2 cubes Dorot frozen chilies or 2 teaspoons red pepper flakes
- 3 cubes Dorot frozen parsley or 1 tablespoon chopped fresh
- 1 teaspoon salt
- 1 cup Greek yogurt
- 1/2 cup grated Parmesan
Instructions
- Heat the oil in a large skillet on medium heat.
- Add the onion and red bell pepper and cook for about 2 minutes or until liquid is evaporated.
- Add the salmon and cook, stirring, for 3-5 minutes, or until fish is almost done.
- Add the garlic, chili, parsley, and salt and cook and stir for a minute or two more.
- Turn heat to low and stir in yogurt.
- Cook, stirring, until heated through.
- Sprinkle with Parmesan and serve over cooked spaghetti squash strands or Nasoya Pasta Zero, if desired.
- Makes 4 servings.
